Lately, I have been obsessed with Avocado’s, which was so random because I used to hate avocado’s. I may be super late to the Avocado Toast game but my goodness this recipe is super delicious. Below is my recipe for avocado toast with mushrooms.

• 1 slice sprouted bread
• 1/2 🥑
• 1 TBSP 🍋juice
• 1/2 TBSP extra virgin olive oil
• 2-3 shiitake mushrooms sliced
• salt and pepper to taste.
• sprinkle of hemp seeds ( optional)
• sprinkle red pepper ( optional


• In a small bowl mash half of the avocado with 1 tablespoon lemon juice and a pinch of salt and pepper. Set aside. ( optional sprinkle hemp seeds)
• In a  pan heat 1/2 tablespoon of extra-virgin olive oil on medium heat. Once hot place your sliced mushrooms in the skillet, sprinkle salt and pepper for flavor and  cook till golden brown. While waiting for the mushrooms  to become golden place your bread in the toaster and toast tell desired “crunch”
• once bread is toasted place on plate spread avocado mixture on toast and place mushrooms on top of toast.
