Veggie Sandwich the modern day girlfriend

Often times people think to eat healthier that means you have to give up many of the things you like carbs and as it does help, you don’t have to cut it all our completely. One of my favorite things in the world are sandwiches and as I am switching over to more plant-based food, I wanted to show  how you can still enjoy your carbs and still be eating healthy.

Veggie Sandwich

Carrots- Carrots  are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants.They also have a number of health benefits. They’re a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health – Healthline. 

Cucumber- Cucumber might seem like nothing, but it’s highly alkaline which is important to prevent muscle and bone loss.- Beautybites.com

Red peppers – Red Peppers contain more than 200 percent of your daily vitamin C intake. They are a great source of vitamin B6 and folate and packed with antioxidants.-Beautybites.com

Avocados- Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.- medicalnewstoday. com

Tomatoes-  the most famous source of lycopene – a powerful antioxidant that prevents cancer and cardiovascular disease. – Beautybites.com

Sprouts –  Sprouts help in digestion,  sprouts contain an unusually high content of living enzymes, boosts blood circulation, helps in weight loss, builds your immune system, improves eye sight, they are heart friendly, helps reduce acidity, and may help prevent premature aging.- healthline 

Onions contain antioxidants and compounds that fight inflammation, decrease triglycerides and reduce cholesterol levels — all of which may lower heart disease risk. Their potent anti-inflammatory properties may also help reduce high blood pressure and protect against blood clots- healthline.

Ingredients 

2 slices of sprouted bread 

Cup of leaves of lettuce

1-2 slices of tomato

1 slice of Onion

1 tsp of Mustard

1/2 Avocado

2-3 slices of Cucumber

1 tsp vegenaise

Sprouts ( Optional)

Pickles ( optional)

Instructions 

Not every sandwich is created equal it all depends on how you like to build your sandwiches.  Depending on the sandwich if you like the bread toasted first or not, ( I do.) I do the spreads first and then place the lettuce down, the condiments help keep everything in place. Stack at your leisure.
