Who doesn’t love a good chocolate chip cookie but who doesn’t love the guilt that comes along with eating four or five of them!
Recently I have been switching my diet to more vegan options and my choices don’t just stop at the entree! I just love the idea that NO animals were harmed in the making of my meal, snacks or bites. That’s why I wanted to share with you one of my favorite non-guilty pleasures with you, my vegan chocolate chip cookies!
( The milk is almond milk! )
Vegan Chocolate Chip Cookies
Ingredients For Vegan Chocolate Chip Cookies:
1/2 cup refined coconut oil
1/3 cup Monkfruit Sugar
1 teaspoons vanilla
1 cups all-purpose flour
1 teaspoon baking soda
1teaspoon baking powder
1/2teaspoon salt
1bag (10 oz) vegan semisweet chocolate chips (1 1/2 cups)
Instructions For Vegan Chocolate Chip Cookies:
Heat oven to 350°F.
In a large bowl stir flour, baking soda, baking powder, and salt. Stir in chocolate chips.
Next, in a large bowl, mix coconut oil, sugar, vanilla until well mixed. Drop dough by slightly rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
Bake 11 to 14 minutes or until edges are light brown and tops look set. Cool 1 minute on cookie sheets. Remove to cooling rack; cool completely. Store in tightly covered container.
