Peanut Butter Quinoa Balls

Quinoa is  known to be one of the most nutrient-dense carbs and has 6 grams of protein per cup  so if you are looking to eat more plant-based or just wanting more protein in your life without having to eat chicken breast upon chicken breast try out dishes made with quinoa like my latest recipe inspired by Vegan Cooking, Peanut Butter and Quinoa Bites.

Peanut Butter Quinoa Balls

Ingredients 

1/2 cup uncooked quinoa @ancientharvest
1 cup water
1 cup coconut shreds
1/2 cup organic creamy peanut butter
2 tbsp maple syrup
1/2 tsp vanilla
1/3 cup raisins (optional)
1/3 mini organic chocolate chips ( optional)
Drizzle of chocolate syrup ( optional )
Drizzle of Carmel sauce ( optional)



Rinse quinoa in a fine mesh strainer under cold water. Let it drain. Next combine 1 cup water and quinoa and medium sauce pan. You will want to bring it to a boil over high heat then reduce heat to low, cover and simmer for 15 minutes or until quinoa is tender and water is absorbed. Cool slightly.

Next you will want to spread coconut in medium skillet. Cook over medium heat until lightly browned and toasted stirring frequently.

Combine quinoa and half cup coconut with peanut butter maple syrup, cinnamon and vanilla in a bowl. If you want to add the chocolate chips or raisins this is where you would do that!

Shape mixture into 1 inch balls. Roll in the remaining half cup coconut to coat.

Refrigerate serve when ready. You can either Drizzle chocolate or Carmel sauce on before refrigerating or right before serving.
