Neil and I are always looking to find healthy bites to have either before or after a workout, bike, ride, etc that is not only good for us but won’t weigh us down.

One day I was looking in our pantry not wanting to go to the store because we are very cautious about how many times we go to the grocery store during the pandemic, especially for snack food so I laid out some ingredients and boom these delicious healthy bites came to be! Whether you’re looking for a good snack or your kids are asking for cookies try giving them one of these, packed with all the good stuff, no guilt required, or sugar rush!

Ingredients

1 cup organic smooth peanut butter

1 cup quick-cooking oats

1/2 cup maple syrup

1 tbsp flaxseed + 3 tbsp water = ( flax egg)

1 tsp chia seeds

1 tsp hemp seeds

1 scoop collagen

1/2 cup raisins ( optional)

Instructions

Preheat oven 400 degrees.

In a small bowl place 1 tbsp flaxseed and  3 tbsp water and let it sit for about 5 minutes, while you get all your other ingredients out and let the oven get to 400 degrees.

In a large bowl place all your other ingredients in the bowl and mix together. Fold in raisins.

With a small ice cream scoop or your hand create a 2-inch ball and place on cookie sheet. Right before you place in the oven take a fork and push the cookie down. Crisscrossing the lines you create with the fork.

Bake in the oven for 10 minutes or until golden brown, keeping an eye on them!
