Vegan Banana Bread

I used to make banana bread all the time, it was one of my favorite bread to make! As I have switched to eating more plant-based it is also gone over to my baking! Which I am so so excited about and wanted to share it here! I also love having my baked goods be a little more “gooey” so not having any raw eggs or things of that nature make it so yummy to dive right into!

Below is my recipe for my Vegan Banana Bread. 

Vegan Banana Bread

Ingredients:

3 ripe  Bananas

2 cups of all-purpose flour

2 tsp Baking powder

1/2 tsp Baking soda

3/4 cups organic sugar

1/2 tsp salt

1/2 tsp nutmeg

1 tsp cinnamon

1/4 cup Vegetable Oil

1/34 cup unsweetened almond milk

2 tsp Vanilla Extract

Dash of clove

1 tbsp Chia or flax seeds, ground ( optional)

1/2 cup vegan chocolate chips ( optional)

1/2 cup chopped walnuts ( optional)

Instructions

You will want to preheat your oven to 350 and place an oven rack to the middle. Grease your pan.

In a bowl, you will want to whisk together the flour, sugar, baking powder & soda, spices and salt together in a large bowl.

In a food processor pulse, the bananas until smooth-ish ( yes that’s a cooking term!) Add oil, almond milk, and vanilla and continue to pulse until well combined.

Next, you will want to fold the bananas into the flour mixture until just combined. Next, you will want to place the batter into your prepared pan. Bake until top golden and firm, place a stick into the center if it comes out clean it is done, if not it still needs more time! During the baking process, you will want to rotate the pan halfway through.

You will want to let the bread cool in the pan for about 7-10 minutes. Once removed place bread on a wire rack and let it cool completely.
