5 Meatless Monday Recipes Perfect For Taco Tuesday
If there is one thing you should know about me is that I will always try and find a way to incorporate tacos, burritos, heck anything Mexican into my meal prep for the week. A huge Taco Tuesday fan I am also just as big of a fan of Meatless Monday so why not combined the two? Right?

1.Black Bean & Guacamole Burrito: I love myself a good burrito ( yes I know that’s not proper english) but when I am chowing down on this delicious burrito I don’t care what I look like or sound like! 😉 Filling yet doesn’t leave you feeling weighed down I love this meatless option to a burrito!
2.Black Bean Flautas With Avocado Dipping Sauce: One of my favorites, clearly as it is two recipes in a row! I have no shame! How can you go wrong with Black Bean Flautas and Avocado dipping sauce! YUM YES PLEASE!
3.Black Bean & Spinach Enchiladas: Everyone loves a good obey gooey Enchilada, I love this recipe because even though you satisfying a guilt pleasure you don’t feel that bad as it is less calories and healthier for you!
4. BBQ Cauliflower & Chickpea Tacos With A Creamy Lime Slaw: Both the cauliflower & chickpea have incredible hard textures that won’t make you miss the meat!
5. Veggie Crack: Great as a dip or even a salad this “veggie crack” is a great way to pack in the veggies and nutrients!
