Vegan Fudge
Do you have a candy that reminds you of your childhood?
Growing up I can remember my mom always having Reese Peanut Butter Cups in the house. It was that one candy that was “allowed” in the house at all times and still is! That one candy that is so nostalgic to my childhood wherever and whenever I see it, it brings a huge smile to my face and makes me think of my mother.
That’s why this Christmas as we head over to my parent’s home, I wanted to bring a little taste of my childhood with me and share my modern-day twist on my mom’s favorite candy. As we don’t eat a lot of sugar anymore as a family and primarily eat plant-based this candy recipe is perfect for vegans and meat-eaters alike. You would have no idea this was completely vegan!

Ingredients
- 2 cups vegan chocolate chips of choice
- 1 cup organic smooth peanut butter
- 1 teaspoon vanilla extract
- 1/3 cup chopped walnuts ( optional )
- 1/3 cup dried cranberry ( optional)
- 1/2 TBSP of flaxseed ( optional)
Instructions
You always want to have your station prepped and if you are baking have your oven preset to the correct heat temperature. We are not using the oven so all you will need before you get started “baking” is having your station set up and ready to go.
First, you will want to line a brownie pan with parchment paper and set aside.
Next, you will want to combine the peanut butter, the vanilla extract into a food processor.
Once combined, let that sit and you will want to melt the chocolate chips in a double boiler or in the microwave, in a microwave-safe bowl. If using the microwave, you will want to melt the chocolate in 15-30 seconds increments mixing after each increment until it is fully melted.
Once the chocolate is fully melted you will want to add the chocolate into the food processor and mix until all is combined. If you are adding the mix-ins ( walnuts, cranberries) you will want to pour the fudge mixture into a bowl and gently mix in the walnuts and or cranberries. If not adding mix-ins jump to the next step.
Once all is combined you will want to pour the fudge mixture into your brownie pan and smooth it out so it covers the pan completely. Next, you will want to place it into your fridge for about an hour.
Once hardened, you will take the fudge out of the pan, you can do this by just lifting it with the parchment paper or releasing the fudge from the paper too.
Either way, take the fudge out of the pan and cut into squares to the desired size.
Storage option:
Store fudge in an airtight container and can be kept in your refrigerator for up to 3 weeks.
