Vegan Cilantro Rice

Do you have a favorite food? My mother, my sister and I LOVE rice. There is just something so comforting about it. We cook it a lot when we are together, we toss it in soups, salads, etc but we love it by itself!  I actually learned a really delicious way to flavor  my  rice from my God mother years ago, it’s been our little secret because anytime we make it everyone wants a pound to themselves!
 Below is my simple yet delicious recipe for cilantro rice. You can either add the cilantro or omit it! It is up to you!

Ingredients:

1 cup of organic white rice

1 cup chopped  organic cilantro

1/2 cup white onion finely chopped

3 cups waters

1 Tbsp Salt

Instructions:

First you will want to get everything in place, lay out all your ingredients so it is an easy toss in recipe minus the cilantro you don’t want it to wilt.

Over medium heat you will want to coat the bottle of your pan with olive oil. Toss in your onions and cook till they are translucent, sprinkle salt. Once the onions are “cooked” toss in the rice and for about 2 minutes cook the rice dry in the olive oil and onions, constantly stirring. After 2 mins add your water into the pan and cover with a lid to allow the rice to steam. I say for about 20-25 minutes. You can check every 10 minutes and stir the rice. The rice will have bite, if you like for it to be soft add more water and let cook for another 5 minutes.
