Vegan Appetizer Grilled Toast with Soften Tomato & Vegan Ricotta
When I first started eating more plant-based it was because I was allergic to so many things and had a very difficult time digesting food in general but especially any real animal product, meat, etc. For years, I tried everything that would still allow me to enjoy the foods I loved. Like anything with melted cheese but it just didn’t work, I was just in too much pain so I decided to look into more of a plant-based diet.
Little did I know how deliciously filling and fulfilling eating this way would be. Look, I am half Italian and half Greek, so we love simple and flavorful dishes, with fresh produce and of course carbs!
This is one of my favorite bites I love to make whether it is just me and a glass of wine or date night this Grilled Bread with Vegan Ricotta and Blistered (softened) Tomatoes! is so simple to make and you can add different seasonings so you can flavor it to your liking. You know add garlic or not add garlic to it depending on who you are sharing it with 😉
Ugh, don’t you just love simple recipes that are packed with flavor! I do so here we go, below is my recipe for Grilled Bread with Vegan Ricotta and Blistered (softened) Tomatoes!
Serving Size 2
Ingredients
1/2 pound small tomatoes
3 tablespoons extra virgin olive oil
Sprinkle of Kosher salt
Sprinkle of dried Basil
Sprinkle of Oregano
2 large slice of sourdough
Instructions:
First, you will want to prep the tomatoes, sprinkle EVOO(extra virgin olive oil), salt, basil, oregano, pepper, toss to coat. Let it sit, tossing is occasionally.
While the flavors are building in the bowl, you will want to prepare your grill to medium to high heat. Brush both sides with EVOO ( extra virgin olive oil) and grill until lightly charred, golden brown, “crispy”. Keep an eye on it!
Lastly before serving you will want to spread the vegan ricotta all over the toast and top it with the tomato mixture. You can add the optional arugula salad on top or enjoy as is, cut in half or enjoy whole!
