sweet potato toast with smashed avocado and soft scrambled eggs

This Sweet Potato Toast with Smashed Avocado and Soft Scrambled Eggs is a new favorite in our home. It is packed with nutrients that not only benefit our overall health but help support our fertility as well,  like the beta-carotene that helps boost progesterone production and is important to embryo development, the choline and protein in eggs to help support a healthy pregnancy and the healthy fats from the avocado which help ovulation and more.

 We couldn’t ask for a better bite. Crunchy, creamy, flavorful, so count me in. 

All you will need is 

Ingredients 

1 sweet potato cut into ½ inch slices or by precut Caulipower as them. 

Olive oil 

1 avocado, pitted, mashed with juice of one  lemon. 

2 eggs 

Salt and pepper to taste

Instructions 

Preheat your oven to 350°F

Next you will want to cut off the ends of the sweet potato and cut the sweet potato into 1/2 inch thick slices. Once sliced you will want to brush both sides lightly  with olive oil, season them with salt and pepper and place them on a baking sheet. I like to use If You Care parchment paper. Makes clean up easier! Finally, bake the sweet potato slices. Bake for about 15 minutes. Once a little golden brown, take out of the oven and let them cool before placing them in the toaster to crisp up, I toast them for like 3 minutes at a time to desired crispiness! Don’t want to burn them!

While you are waiting for the sweet potatoes to bake you can smash together your avocado and lemon juice in a small bowl.
In another small bowl you will want to scramble two eggs together and cook them in a small pan to your liking. The eggs don’t even have to be scrambled they can be poached, sunny side up, over easy, over medium, you catch my drift.
Once all are prepped and ready to go, you can now assemble and enjoy!
