Last year I shared how to make different meals for the week with one chicken but this year, as I have shift my lifestyle to eat more veggies and plant based proteins. I’m going to take a handful of veggies and show how I can make 3 different meals with it. The first blog post will be this one, easy to make veggie spring rolls!

Basil-is an excellent source of vitamin K, manganese, iron, vitamin A, and vitamin C. It’s also a good source of calcium, magnesium, and omega-3 fatty acids. fromthegrapevine.com
Veggie Spring Rolls
Ingredients
Makes about 3 Spring Rolls
1-4 ( 10 -inch) rice paper wrappers
3 Basil Leaves
1/2 large organic Carrots thinly sliced
1 organic Red Bell Pepper thinly sliced
1-2 Persian Cucumber, seeded and cut into long matchsticks
1 avocado, halved, peeled, seeded and thinly sliced
Optional :
Peanut Sauce.
Low Sodium Soy Sauce
Instructions
Place the rice paper in a shallow dish of water, submerge it for about 10-15 seconds.
On a dry board place wet rice paper, and fill it with the ingredients of your choice.
You will not want to over fill it because the paper will break.
Once you fill it to your liking, you will go from the bottom up, fold the bottom of the rice paper up and over the ingredients and than tuck in the sides, and roll till closed!
