I wanted to share with you another simple yet delicious meal that is packed with incredible nutrients and health benefits of vegetables. Today, I wanted to share one of my favorite plant-based meals, my grilled veggie bowl! It is super easy, you can make enough for two or just yourself!
Health Benefits
Red Onions– Red Onions are packed with nutrients, may have heart health benefits, they are loaded with antioxidants. They contain cancer-fighting compounds, help boost bone density, and have anti-bacertial properties. They may also boost digestive health. – -healthline.com
Corn – Corn reduces the risk of Anemia. Corn is rich is in Vitamin B12, folic acid and iron which helps in the production of red blood cells in the body. It helps enchance your energy, helps lower blood sugar and cholesterol level, helps during pregnancy, preserve healthy skin.- healthline.com
Sweet potatoes- Sweet Potatoes are highly nutritious. They are also a great Sweet source of fiber, vitamins, and minerals. They promote gut health. The fiber and antioxidants. They may also have cancer-fighting properties, support healthy vision,may support your immune system. healthline.com
Black beans- Black beans has a great source of fiber, potassium, folate, vitamin B6, and phytonutrient content of black beans, coupled with its lack of cholesterol, all support heart health. This fiber helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease healthline.com
Red Bell Pepper– Red, Orange, and Yellow Bell Peppers are full of great health benefits—they’re packed with vitamins and low in calories! They are an excellent source of vitamin A, vitamin C, and potassium. Bell Peppers also contain a healthy dose of fiber, folate, and iron-naturefresh.ca
Asparagus– Asparagus is a nutrient-packed vegetable. It is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells. Brown Rice – The health benefits of brown rice are largely due to it being a whole grain. According to HSPH, the fiber in brown rice helps lower cholesterol, moves waste through the digestive tract, promotes fullness, and may help prevent the formation of blood clots. – livescience.com
Jalapeno– Jalapeños are rich in vitamins A and C and potassium. They also have carotene — an antioxidant that may help fight damage to your cells – as well as folate, vitamin K, and B vitamins. Many of their health benefits come from a compound called capsaicin. That’s what makes the peppers spicy.- webmd.com
Grilled Veggie Bowl
1/3 cup charred Corn ( can or frozen charred corn)
Red onions
1/2 cup black beans
1/2 avocado chopped
1/2 cup lettuce
1/2 cup frozen Brown rice from Trader Joes
Couple slices of Jalepano ( Top with)
1/2 sweet potato chopped into small pieces ( optional)
1 Red Bel chopped into small pieces ( optional )
3-4 stalk asparagus chopped into small pieces ( optional )
lime slice ( optional)
Instructions:
You can either grill everything separately on the grill or you can “grill” it up in a skillet. For the blog post I cooked everything separately but you can just toss everything into a pan and cook it up! If you are cooking it seperately I would cook the rice first. Next the large vegetables that will take a longer time to cook!
