Substitute For Eggs
Did you know that finely ground flaxseed makes an excellent binder that in things like baking can make a great substitute for eggs! The basic ratio to equal one egg is 1 tablespoon of ground flaxseed to about 3 tablespoons. Let the mixture sit for 20 minutes before adding.
Cooking note: Flaxseeds have a nutty flavor.
Baking Soda & Vinegar
I like to use this one when I am making a cake, cupcakes, pancakes, etc. The basic ratio to equal one egg is 1 teaspoon of baking soda with 1 tablespoon of white vinegar.
Bananas
I love using bananas in my pancakes instead of eggs, every time I make I think I can’t wait to make these for our kids one day, God willing. Back to the point! Bananas are a great substitute for eggs in things like pancakes, muffins, etc. They add a lot of moisture to batter and are naturally sweet though so keep that in mind when you are using sugar. One medium banana, mashed, can replace one egg.
Cooking note: A banana isn’t a leavening agent like an egg.
Peanut Butter is a great binder when it comes to baked goods like cookies, it will however drastically change the flavor of anything you are baking! I usually use the ratio of 1 tbsp peanut butter to equal one egg.
The applesauce is very similar to the banana, it brings a lot of moisture to the batter. You will want to go with the unsweetened kind. You will want to use 1/4 cup for every egg.
Cooking note: Applesauce isn’t a leavening agent like an egg.
Actual Egg Replacer:
One of my favorites is Bob’s Red Mill Egg replacer.
If you are making something savor like a burger, meatballs, etc try using roughly about 2 tbsp instant mash potatoes to equal one egg!
