I don’t know where I have been but Neil and I just jumped on the meal planning bandwagon, we are getting our toes wet into the meal prepping but meal planning we have come to LOVE! Not only doesn’t it take the pressure off answering the dreaded “what should we have for dinner tonight, but” question it also truly makes a difference when it comes to saving money. You can either go into each week and say, this is how much I want to spend or can spend on this week’s groceries.
One thing that can add up when you are grocery shopping without even noticing is, the amount you spend on “snack items”. A few bags of chips here, some chocolate, there, some crackers, here, and so and so on. I love including snacks into our meal planning not necessarily as you have to eat them on certain days or times but because we know exactly what we have in our cabinets. We like to eat pretty healthily so having snacks that we know exactly what is in them and can keep us going throughout the day without weighing us down is huge! Oven-Roasted Chickpeas
Since eating more plant-based, I have done my research on where I can get my protein from and one of my favorite forms of plant-based protein is from chickpeas. I put them in my salads, pasta, smoothies, and sometimes just on their own. I. used to just eat them raw but lately, I decided to bake them which are great alone and also wonderful on salads!
