Since eating more plant-based, I have done my research on where I can get my protein from and one of my favorite forms of plant-based protein is from chickpeas. I put them in my salads, pasta, smoothies and sometimes just on their own. I. used to just eat them raw but lately, I  decided to bake them which are great alone and also wonderful on salads!

Ingredients
  1. 1 19oz can chickpeas, drained and rinsed
  2. 1 tablespoon olive oil
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon pepper  optional)
  5. 1/2 teaspoon chill powder (optional)
  6. 1/2 teaspoon tumeric (optional)
  7. 1/2 teaspoon onion powder (optional)

Instructions 

First, you will want to preheat your oven to 375F

Next, you will want to drain and dry the beans. After dried, you will want to spread the chickpeas evenly on a baking sheet. Place in the oven and bake for about 25- 30 minutes. You will want to keep an eye on them and give them a shake every 10 minutes!

Once they are lightly golden you will want to remove them from the oven and place the chickpeas into a bowl with olive oil, salt and any additional spices you like.

Next, you will want to toss until everything is well combined/covered. Next, you will want to pour the chickpeas back onto the baking sheet and place them back into the oven for another 15 minutes. ( keep an eye on them.)  Once they are golden brown you will want to remove them from the oven,  place them in another bowl to let cool. Let them cool before enjoying them as they will be very hot.
