Vegan Pasta Dish With Avocado Pesto and Blistered Cherry Tomatoes

The other day on my Instagram story I took a poll asking about avocado pesto pasta and if it was something that you may have tried before or not. An overwhelming number of you haven’t and to be honest with you up until about a month ago. I started recipe testing to perfect this modern healthy twist on traditional comfort food!

This Avocado Pesto is thick and creamy! The texture from the avocado and the addition of the basil brightens up the dish not only in color but in flavor! This recipe is not only TRULY delicious it is quick and easy to make!

Ingredients

Vegan Avacado “Pesto”

1  large Avocado
1 cup Basil, packed
1 Garlic clove
1 1/2 tbsp Lemon juice
1/4 tsp Pepper
1/2 tsp Salt
1 tsp red pepper flakes
1/2 cup Olive oil
1/4 cup Pine nuts
Blistered Chery Tomatoes 
2 cup of organic cherry tomatoes
2  cloves garlic, chopped finely
1/2 tsp Black pepper
1 tsp  Onion Salt
2 tbsp Olive oil
First, you will want to heat your skillet with olive oil on medium heat. Next, add garlic, cook for about 2- minutes add tomatoes. Let them cook for another 3 minutes. Remove from heat and add the salt and pepper.
Vegan Avocado Pesto 

 In a  blender add avocado, basil, lemon juice, onion salt, pine buts, and garlic. Blend until smooth and creamy, seasoning to taste serve on pasta, veggies and more! If you like your sauce a little more smooth add 2 tbsp water until desired consistency.
