Vegan Black Beans

Vegan Black Beans  the modern day girlfriend

It was an on going joke for years, like in college or my first couple years, living on my own  that if I invited you over I would be making beans with something else or if you happen to drop by on a random night when I was home just enjoying a glass of wine and Netflix to myself you were sure to find me with a bowl of beans and rice as well! I don’t know what it was and still is but I love beans from black beans to garbanzo beans! Today I am sharing my favorite way to cook them up, they’re great to eat on their own but also great in tacos, salads, burritos, pasta, eggs, quiches, etc!

Ingredients

8 oz organic  black beans canned, washed and drained. 

1 organic white onion, chopped small.

1/2 teaspoon Garlic Powder 

1/2 teaspoon onion powder

1/2 tsp of chills powder ( optional if you like things spicy)

1 lime juice ( optional)

cilantro garnish( optional)

salt to taste

Instructions

Heat the olive oil in your pan on medium to low heat, next add your chopped onions and sauté for about 5-7 minutes.   Add the black beans into the pan  with garlic and onion  powder.  Cook for about  15-25 minutes the onions will start to get crispy and the beans will get ” charred” a little. Take off the heat and enjoy you can  squeeze in the lime juice and add some chopped cilantro on top. if desired.

You can use this for your vegan loaded quesadilla or loaded vegan nachos!
