Due DATE Cookies
INGREDIENTS
- 2 large ripe bananas, peeled
- 1/2 cup packed pitted Medjool dates
- 1/4 cup virgin coconut oil
- 1 tsp chiaseeds
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/8 teaspoon sea salt
- 2 cups gluten-free quick cooking oats
- 1/3 cup HU chocolate chips (I like a lot of chocolate chips)
DIRECTIONS
First you will want to get all your ingredients ready and in place, while you preheat the oven to 350F. Line a large baking sheet with parchment paper.
Next in a food proccessor you will want to add your bananas, pitted dates, vanilla, coconut oil. Process till smooth. I look for the dates to be really well blended into the mixture, no big chunks, etc.
Next add your baking powder, cinnamon and salt. Blend again just so it is all incopperated next your will want to add a cup and half of your oats and blend them together so the mixture combines.
Next I put the mixture into a seperate bowl and add the rest of the rolled oats at the chocolate chips and mix with a spatula. I seperate the oats because it gives them a different texture, mouth feel when eating the cookie. It also helps bind the cookie together.
With either a large spoon or a small to medium ice cream scoop, place your mixture on your prepared baking sheet.
Bake for about 15 minutes or until golden brown bottoms.
Take them out of the ovenn and let them cool completely on a cooling rack.
