Ooey Gooey Rocky Road Cookies
My favorite ice cream flavor as a kid was Rocky Road Ice Cream but as I grew up eating a pint of ice cream for the second night in a row on my couch wasn’t agreeing to well with my stretchy waist sweats nor my social life. I wanted to come up with a way to satisfy my sweet tooth and not have it go straight to my thighs rather send me back with one bite to those wonderful childhood memories that each fluffy marshmallow and crunch of an almond brought back.
That’s why for this delicious decadent cookie recipe, I shaved off calories by using Truvia Brown Sugar Blendso I don’t feel bad having one or two okay maybe three cookies before I go out!
Ingredients:
- 1 Cup Unsalted Butter, Softened
- 1 Cup Truvia Brown Sugar Blend
- 2 Teaspoon of Salt
- 1 Teaspoon of Baking Soda
- 2 Egg
- 2 Teaspoon Vanilla
- 2 Cups + 1/2 Tablespoon All Purpose Flour
- 2 Cups Chocolate Chips
- 1/2 Cup chopped almonds
- 1 Cup Small Marshmallows
Optional: Chocolate Drizzle & Almonds
- 1 Cup Chocolate Chips
- 1/2 Cup Whole Milk
- Chopped Almonds to garnish
- Melt chocolate and milk together in microwave until smooth, stopping every 15 seconds to make sure mixture doesn’t burn.
- Garnish with Almonds.
Directions:
- First you want to preheat your one to 350F
- Next you want to grease two cookie sheets with non stick cooking spray.
- In medium bowl you will want to mix together the butter, the Truvia Brown Sugar Blend, salt, baking soda and Vanilla together.
- Next you will want to stir in the eggs, one at a time.
- Once the eggs are incorporated you will want to mix in the four.
- Add chocolate chips and Almonds
- Next you want to roll dough balls about 1 inch each in size.
- Placing them on the cookie sheet you will want to top them off with marshmallows pressing them into the dough.
- Bake for about 8-12 minutes
- Add additional toppings if desired.
