She has truly inspired me in more ways than I can ever express. Every time I step into the kitchen I feel inspired because I know I have her in my heart. This dressing is inspired by her creamy shallow vinaigrette that I love love putting on my salads you can also put it on chicken, fish, or turkey. This recipe will keep up to 4 days in the kitchen.
1 TBSP OF DIJON MUSTARD
3/4 CUPS EXTRA-VIRGIN OLIVE OIL
1 TABLESPOON MINCED SHALLOTS
3 TABLESPPONS CHAMPAGNE VINEGAR
2 TABLESPOONS FRESH LEMON
1 TEASPOON KOSHER SALT.
IN A BLENDER COMBINE THE MUSTARD AND OLIVE OIL;
BLEND FOR ABOUT 30 SECONDS. POUR INTO A BOWL AND ADD THE SHALLOTS, CHAMPAGNE VINEGAR, LEMON JUICE, AND SALt. WHISK UNTIL SMOOTH AND CREAMY.
