This past weekend Neil and I looked in our pantry and freezer where we saw a little bit of this and a little bit of that and of course some tequila. Without skipping a beat we both decided we wanted to make some “comfort food” while enjoying nice cool margaritas and a Netflix documentary.

These vegan nachos are not only simple to make but FREAKING delicious if I do say so myself! ⠀

LOADED VEGAN NACHOS the modern day girlfriend

Ingredients 

•1 bag Trader Joes restaurant tortilla chips or your favorite tortilla chips ⠀
•1 can organic black beans ( sautéed in 2 tbsp olive oil, 1 tbsp onion salt, 1 tbsp garlic powder, 1 tbsp of chili powder) 5-7 minutes on medium heat ⠀
•1 package of beyond meat ground meat ( sautéed in 2 tbsp olive oil, 1 tbsp onion salt, 1tbsp garlic powder, 1 tbsp of chili powder or your favorite taco seasoning) 5 minutes on medium heat ⠀
• 1/2 white onion diced ⠀
• 1/2 bundle cilantro finely chopped ⠀
• 1jalapeño sliced ⠀
•2 cups homemade guacamole ( I shared this recipe previously on the feed just look for a picture of guacamole) ⠀
•2-3 cups Daiya foods grated cheddar cheese or your favorite milk alternative chested cheese. • 1/2 cup  Tofutti  sour cream ⠀
• 1 cup grilled corn (optional )⠀

Instructions ⠀
• Preheat oven on broil at 415 degrees ⠀
• Prepare all the ingredients separately⠀
• Places chips on a baking sheet, next add beans, meat, and cheese. ⠀
• Place in the middle rack and cook it for about 10 mins. Constantly watching it so it doesn’t burn. ⠀
• Once slightly golden brown and the cheese is melted take it out of the oven and add the rest of the toppings of diced onions, cilantro, jalapeños, guacamole, and sour cream! ⠀
