The Perfect Meatless Monday Snack: Kale Chips

No joke, I was looking through my fridge earlier today and saw that I had kale that seemed to be going bad. Knowing my mother wouldn’t be to happy hearing I wasn’t eating my vegetables, I decided to de-stem the kale and freeze half for smoothies and take the other half and make Kale chips! Kale chips are a super delicious and easy to make for a healthy snack.

Ingredients needed for kale chips:

Cook Time: 10 minutes

Prep Time: 5 minutes

Servings: 1

  • 1 bunch of kale, de-stemmed
  • 1 tbsp extra virgin olive oil
  • 1 large pinch of sea salt
  • 1 large pinch of cracked black pepper
  • 1 Teaspoon of Cayenne ( optional)
  • 1 Teaspoon of Turmeric ( optional)
  • 1 Teaspoon of Chili Pepper ( Optional)

Instructions for the kale chips:

1. Preheat oven to 350 degrees.

2. Wash and dry kale, break into chip size pieces.

3. In a bowl add your kale and drizzle kale with olive oil and sprinkle with sea salt &  pepper.

4. If desired sprinkle your cayenne, Tumeric & Chili Pepper.

5. Place on cooking sheet & bake until the edges brown but are not burnt (about 10 to 15 minutes.)
