Egg Bites
Okay, I will admit that I am or should I say was a sucker for those egg white bites at Starbucks, I don’t know what it was but I had them once and craved them ever since. I would want to go even just to get them without getting a coffee. Which when I say out loud sounded crazy to me. Why not just make them at home not only will it save money but I also will know exactly what goes into them.
I love these easy and healthy egg bites, great for a fun fast breakfast option or how we like to enjoy them as a quick snack that packs protein and nutrients. You can fill each cup differently or all the same, use this recipe as a guideline but if you don’t like an ingredient that I choose, pick something that you like!
Great for meal prepping, we like to make a big batch to have throughout the week, it’s also inexpensive!
Ingredient
- 1 carton egg whites
- 1 cup fresh chopped spinach
- 1 cup diced organic bell peppers
Optional Add-ons
1/2 cup jalapeno seed and diced
1/2 cup chopped olives
1/2 cup chopped basil
1/3 cup crumbled feta, goat cheese, cheddar shreds, etc.
1/2 cup diced cherry tomatoes
The list can go on and on!
*I don’t salt mine because for these bites there so little I leave it to the consumer hahah 😉 !
Instructions
Preheat the oven to 375 F degrees and spray a muffin pan with cooking spray. I use a silicone mini muffin pan.
Nex you will want to sprinkle the spinach, bell peppers evenly in each muffin tins. Nextt pour egg whites almost to the top of each muffin tin.
Next bake for 20 minutes, until the egg whites, are set and the edges are starting to brown. Pop them out!
Cool and enjoy!
