Easy Vegan Appetizer Bruschetta

Growing up half Italian, you better believe that bruschetta was at every family dinner table. Whether we wnt to my grandparent’s house, aunt or uncles, it was a simple yet delicious staple at the table! As I grew up and moved into my own home, I knew there were traditions I wanted to carry on as I grew my family. This simple recipe is one of them not to mention it is perfect for “meat-eaters” and vegans alike. I also love the health benefits that come along with this recipe! Below I share not only the recipe but the health benefits of the ingredients in it!

Easy Vegan Appetizer Bruschetta

Ingredients 

  • 1/4 cup extra virgin olive oil
  • 1 1/2 Tbsp minced fresh garlic
  • 4-5 organic tomatoes, diced. 
  • 1 Tbsp balsamic vinegar, or more to taste
  • 3/4 tsp kosher salt, then more to taste
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp red pepper flakes ( optional)
  • 1/4 cup chopped basil ribbons (chiffonade)
  • 1 baguette sliced into 1/2-inch thick slices 

Instructions:

First, you will want to pre-heat your oven to 325 degrees. Next, you will want to heat the olive oil in a pan over medium to low heat and add the garlic, you will want to cook the garlic until it starts turning golden.

I like to cook the garlic in the oil because it helps permeate the oil with the garlic flavor.

Once the garlic is “cooked” you will want to take the oil off the heat and it to a large bowl ( not a metal one).   While you wait for the oil to cool you will want to chop the tomatoes and basil. Place the chopped tomatoes and basil into the bowl with the olive oil. Coat the mixture evenly and you can serve immediately over toasted bread.

For the toasted bread, cut the baguette into about 12, 1/2 inch slices. You will want to coat them with some olive oil, place on a baking sheet. Place in the oven for about 5 minutes, watch them. You will want to “bake” the bread till it is slightly golden brown!

Once golden take the toast out of the oven and let cool before placing the bruschetta mixture on top. Once all is cooled, layer the bruschetta on top of the toast and enjoy!
