Grain-Free Blueberry Muffins

These are not your average blueberry muffins, dense yet soft these muffins are packed with nutrients and so delicious. They aren’t like your typical blueberry muffin, made with almond flour it is definitely more dense but boy are they delicious.

I love making healthy muffins to have on hand when Neil and I are looking for something to snack on during that midday slump or if we are headed out on a road trip or long car ride.

Ingredients

  • cups almond flour
  • 1 tsp Chia Seeds
  • 1 tsp ground flaxseeds
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda 
  • 1 tbsp cinnamon
  • cup blueberries fresh or frozen
  • 3 eggs
  • tbsp pure vanilla extract
  • 1 1/2 tbsp lemon juice
  • 1/2 cup oat milk

Instructions

First you will want to pre-heat for oven as you wait for your oven to get to 350 degrees C. You will want to get all your ingredients out and in order. Prepare the muffin tin with baking spray or muffin liners if desired. Next you will place all the dry ingredients into bowl and combine. In a separate bowl you will combine all the wet ingredients. Once combined add the dry ingredients into the wet ingredients and mix well. Once combined you will want to softly fold in the blueberries. Distribute the mixture into muffin tin. Bake for 25 minutes, until golden brown.
