Ultimate Quick & Easy Egg Salad
There are no mistakes in the kitchen, just opportunities to make something different. My sister Alex Thomopoulos ( click for site) always says that and she is right! Even if you think you have royally messed up, there is always a way to fix it and maybe even make it even better!
Growing up and spending time with Alex in the kitchen not only did I take her cooking advice, I also took her life advice. While she helped me fix my mistake, she made me realize whether it was an egg or break up, we are all going to make mistakes and we shouldn’t let that stop us! We need to take a moment collect our thoughts and we will be amazed at what we can create.
Needless to say that this recipe came out of one of those “oops” moments! On Mother’s Day this year, I wanted to try something new, I had heard about baking eggs in the oven. Which can give the egg a similar constancy of poached egg and not to mention the cooking and clean up process is much easier and faster.
Not necessarily knowing what I was looking for I over cooked the eggs calling for my sister, she looked at me and said don’t worry we can make something from this. Less than 10 minutes we created the ultimate quick and easy egg salad.
Ingredients:
6 organic eggs
2 ribs celery, finely diced
2 scallions, chopped fine (white parts only)
1 serrano pepper, ribs and seeds removed if you like it less spicy
1 tablespoon dijon mustard
3 tablespoons mayonaise
1/4 teaspoon salt
lots of cracked black pepper
Instructions:
Preheat oven to 350 degrees F. Spray a muffin tin with non stick spray. Crack one egg into each tin and add 1 tablespoon of water to each egg.
Bake for 13-14 minutes. Or until the egg yolk is just cooked through.
In a medium bowl, add chopped scallions, celery, serrano, dijon mustard, and mayonaise. Set aside.
When eggs are done cooking, pull them out of the oven. Using a spoon take each egg out and allow them to cool on a cutting board for about 5 minutes.
When cool, add the eggs into the bowl of veggies and mash the eggs to combine. Season with salt and lots of cracked pepper.

Not only did we stumble upon making a delicious egg salad, we realized we don’t peel one single egg! What a great kitchen hack for the modern day girlfriend!
