Chex Mix: The Perfect Sweet Snack

During my sophomore year in college, my roommate couldn’t make it back home for the holidays so, of course, I invited her to join me and my family.  She asked if she could bring anything. I told her it wasn’t necessary and thanked her for the thought. She explained that she would like to contribute in some way by including one of her favorite holiday traditions. So not only was she sharing a holiday tradition with us but she was able to have a sense of her family with her for the holidays.

A couple of days before we headed out to my family’s house, she was in our dorm room kitchen preparing these delectable treats and an aroma permeated the halls of the dorm.  Other students passing by knocked on our door asking us where that mouthwatering smell was coming from and most importantly they wanted some. When I asked her what she was making she said it was one of her family’s favorite holiday treats called Puppy Chow also known as Muddy Buddies!

As she was mixing, I was sneaking tastes. I can still remember the first crunch of the Chex and the yumminess of the chocolate. My roommate began to tell me about how this family tradition started and how she knew the holidays were just around the corner when it was time to make Puppy Chow.

A huge hit in my family, we now look forward to these treats making their appearance not just for our holidays but birthdays, bridal showers, baby showers, bachelorettes or quiet movie nights at home. There are many delectable combinations of flavors your can mix in with the Chex Cereal the true star and staple of this dish!

One of my favorite recipes is Chex’s Sugar Cookie mix. This particular Chex recipe is gluten free which is perfect because this year I started out my Chex-giving with making goodie bags for my best friend’s birthday party who happens to be gluten free. The Chex Sugar Cookie mix was a home run and didn’t last long! The guest ate their whole bag before they finished opening up the rest of their party favors!

 Sugar Cookie Chex Mix Snack

Ingredients

  • 6 cups Rice Chex cereal
  • 1/4 cup butter
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons water
  • 2 teaspoons vanilla
  • 1/4 cup powdered sugar
  • 1 oz white baking chocolate or 1/4 cup white vanilla baking chips
  • 1 to 2 teaspoons gluten-free colored edible glitter or sugar sprinkles

Instructions

In large microwavable bowl, measure cereal; set aside. Line cookie sheet with waxed paper or foil.

In 2-cup microwavable measuring cup, microwave butter uncovered on High 30 seconds or until melted. Add granulated sugar and water; microwave uncovered on High 30 seconds or until mixture is heated and can be stirred smooth. Stir in vanilla. Pour over cereal, stirring until evenly coated.

Microwave uncovered on High 4 minutes, stirring every minute, until thoroughly glazed. Sprinkle with powdered sugar; mix well.

Spread on cookie sheet. In small microwavable bowl, microwave white chocolate uncovered on High 30 to 60 seconds, or until it can be stirred smooth. Place in small resealable food-storage plastic bag; cut off small corner of bag. Squeeze bag to drizzle white chocolate over snack mix; sprinkle with edible glitter.

Cool until white chocolate is set, about 10 minutes.

Tips

  • Techniques: For an easy and even way to apply the powdered sugar, pour sugar into large resealable freezer bag. After removing cooked snack mix from microwave, let stand in bowl 1 to 2 minutes to cool, then pour into bag and shake!
  • Healthy: Always read labels to make sure each recipe ingredient is gluten free. Products and ingredient sources can change.
