Growing up Greek and Italian, we cook every meal like there will not be a next one. We also never know who will be coming through our door so we over cook and send people home with goodie bags of delicious food as well as delivering any leftovers or food to those in need.

Last week, I shared my first dinner for two, Kale Caeser Salad with Salmon and it sparked something inside of me! Sometimes cooking for just two people can be harder than cooking for a large group of friends and or family! When I first moved in with my fiance, boyfriend at the time, we tended to cook the same meal like 3 -4 times a week. Which can get old fast.

Which got me thinking, I can’t be the only one who finds it hard to find recipes for two that are not only delicious but are healthy ( sometimes) and most importantly gets you excited about making dinner, instead of ordering postmates, or take out!

Whether you live with a roommate, just started dating, just moved in, just got engaged, just got married, or are empty nesters, I wanted to create a space here every week that you can come to and be inspired by recipes you find that are perfectly plated for the two of you!

PAN SEARED SALMON WITH WILD RICE IN COCONUT CURRY BROTH BY Hapa Nom

Neil and I love Salmon, it is such a versitle fish, easy to prep and fast to cook, salmon can be prepared from baking it to poaching it! However, our favorite way is to pan searing it! That’s why we love this recipe for Pan Seared Salmon in coconut curry broth by Hapa Nom Nom! Super simple to make and affordable this is perfect for a night in together!
