MARINATED OLIVES APPETIZER
Some people might run to the fridge for grapes or an apple for a snack, not me, I always have a jar of olives on hand. You think I am joking, I am not, there is something about the tangy saltness that I crave through out the day. I also love to toss coarsely chopped olives into my pasta and add them to salads. One of my favorite ways is to finely chop olives to make an olive tapenade and spread them over grilled crostini and of course I love them in my cocktails!
Here is my recipe on how to make your own marinated olives!
Ingredients:
- 1 – pound mixed olives, pitted or un-pitted.
- 2 – tablespoon olive oil
- 1 – tablespoon dried oregano
- 2 – teaspoon dried thyme
- 1 to 2 large garlic cloves smashed; skins removed
- 1 – teaspoon of red pepper flakes
- 1 – lemon cut into quarters
- 2 – fresh dill sprigs coarsely chopped
Instructions:
Drain the olives in a colander and set aside. In a large glass bowl, add olive oil, smashed garlic and dill. Let this sit for about 10 minutes.
Add the oregano, thyme, red pepper. Add the lemons but squeeze them first over olives. Mix well. Let stand at room temperature for 20 minutes.
