fertility friendly pesto the modern day girl friend

I LOVE pesto! The smell, the taste and the texture, YUM!  I can literally taste it as I write this! Just the smell of the basil  makes me think of my childhood and cooking with my mom. I think it is safe to say that the smell of basil reminds me off my mom, it makes me smile every time.

My mom taught me to make pesto with pine nuts and  it is delicious don’t get me wrong but I have been reading so much about the health benefits of walnuts not only for your fertility but your overall health as well.

Like being  packed with a good source of omega-3s and antioxidants, that help aid in fertility along with being an incredible source of nutrients such as vitamin E, selenium, and Magnesium. I swapped out the tradition pine nuts for walnuts to get that extra nutty flavor along with the nutrients and healthy fats!

Ingredients 

2 cups Basil

1 small clove garlic

1 cup walnuts

1/2 cup extra virgin olive oil

2 tbsp lemon

1/4 salt

1/4 ground pepper

Instructions 

First you will want to add the basil leaves and garlic in a food processor blend well. Next you will add the walnuts, and continue to blend well  once that happens you will want to drizzle in the olive oil and lemon juice until it becomes a smooth paste at the end add salt and pepper for one fine mix.

  • NOTE: If you are not going to use the pesto right away place it in an air tight container. Depending on how long you keep it in the fridge before using you may need to add more olive oil when using it  on something cold.
