I have mentioned this before but I love the idea that most fruit and veggies look like the foods that they benefit in the body and it doesn’t just stop with a fig (testicles) or a tomato ( the heart), even an egg looks like the part of the body it benefits.

Did you know that an egg yolks supply almost all of the egg’s iron, calcium, zinc, vitamin B6, folate, and vitamin B12 as well as containing  100% of the egg’s vitamin A. Egg yolks from pasture-raised chickens are also extremely rich in fertility-boosting omega-3 fatty acids EPA and DHA and fat-soluble vitamins A, D, E, and vitamin K2.  They are also a source of lean protein, which has also been found to be good for fertility in both men and women. Eggs also contain choline, which is needed in fertility and pregnancy. *1

What I love about omelets is that you can pack them with so many delicious ingredients that  packed with nutrients great for conceiving and pregnancy like red bell peppers, dark leafy greens, black beans, etc.

I love this recipe because it is a great recipe to get your eggs which are packed with Choline which has been known to be great for fertility as well as pregnancy but doesn’t taste like eggs at all so this recipe is a great one for first trimester where all you want is bread, rice or a form of carbs!

Recipe:

1/2 cup quick cooking oats 

2 eggs

1 tsp chia seeds 

1tsp ground flaxseeds

1 tsp hemp seeds 

1 scoop vanilla collagen (optional check with your doctor first.)

I love this recipe the creaminess of the avocado the healthy fat it offers, again of course the eggs. I love using whole grain toast with nuts as well as topping the whole thing with hempseed for the extra protein.
