A Greek salad is one of my favorite salads because not only is it super fresh but it is packed with delicious flavors and health benefits. Not to mention being half Greek, this is definitely a staple in my daily diet. I am not kidding we probably make one every week. We love enjoying it as it made traditionally but we love adding things in the mix like quinoa or cuscus or even lentils. This salad is so versatile when it comes to add-ins! You can dress it up or down, whatever you prefer!
Whether you eat it in a traditional manner or add stuff it, it’s a delicious bite for weekly dinners and great for meal prep meals!
Greek Salad with Quinoa

- 1 cup dry quinoa, rinsed and drained
- 1 cup grape or cherry tomatoes, quartered
- 1 cup diced cucumber
- 1/2 cup feta cheese, crumbled ( optional if you eat cheese or don’t)
- 1/4 cup finely chopped red onion
- 1 cup black olives ( optional)
Dressings
Instructions
First you will want to clean the quinoa, rinse and dry. Cook in water according to the directions on the box! I like to cool it down before mixing it all.
While quinoa cooks make the dressing. Whisk together red wine vinegar, oregano, lemon juice, olive oil, honey, salt and pepper .
Serving options, either prepare it like the photo above or mix it all together.
If you are mixing it all together just add everything in a bowl and enjoy! Stir together quinoa, spinach, tomatoes, cucumber, feta cheese, red onion, basil and parsley along with your dressing!
Either eat immediately or chill it in the fridge before you serve it! Keeps up to about 3 days in the fridge.
