To be honest with you I was inspired to create this recipe and many others while learning all the healthy foods to incorporate into my diet while pregnant, I have so many to share and even though I miscarried, eating nourishing foods is super important to0 healing.
Below is our favorite 9 ingredient chili packed with nutrients to help aid in your all around health, not to mention its super comforting while crying on your couch or around the dinner table with your family.
9 Ingredient Chili
1 pound organic ground chicken
1 large white on ion, finely chopped
1 poblano or jalapeno, roughly chopped,
1 & 1/2 14 ounce can diced tomatoes
1 can organic corn kernels, drained
1 can organic black beans, drained and rinsed.
1 tbsp chili powder
2-3 tbsp Trader Joe’s Taco seasoning
salt and pepper to taste
- you can add water 1/2 cup at a time if you want the chili more soup like.
First you will want to coat the bottom of your pot with olive oil and sweat the onion over medium heat, sprinkle with a pinch of salt. Cook until it translucent and add the diced jalapeño pepper and cook for about 2 minutes. Next add the chicken, and sauce the chicken until it is browned, about 10 minutes.
Season with chili powder and Trader Joe’s Taco seasoning.
Stir in the diced tomatoes, corn and bean and bring to a rapid simmer, sprinkle with salt.
Reduce the heat to low and simmer uncovered, stirring occasionally for about 30 minutes.
