Summer Salad with Avocado and Grapefruit

This salad is so simple to make and is truly packed with so many amazing nutrients as well as flavor.  I love eating with the seasons and this salad is perfect for the Spring and Summertime! I also love the health benefits the salad provides from the vitamin C in the grapefruit to the healthy fats in the avocado. By the way did you know avocados are like a superfood when it comes too fertility?

Have you ever really looked at an avocado? It is shaped like your womb/uterus. Seed in side and all. I learned about the health benefits of avocados towards my fertility about a few years ago and have loved incorporating them more into my diet especially now.

I can get more into the health benefits of avocados but maybe I will save that for another post! Below is my simple Summer Salad with Avocado and Grapefruit!

Serves 2

2 large handful of  organic arugula (washed and dried)

1 avocado , peeled and cut into slices 

1 -2  pink grapefruits , peeled and segmented ( depending on how much citrus you like)

1 tsp hempseed  ( optional)

Dressing 

1 tbsp olive oil

1 lemon

pinch of salt and pepper  to taste

Instructions: 

First you will want to prep all you ingredients, wash and dry the arugula, peel and slice the avocado as well as peel and segment the grapefruit. Next add all the ingredients to a bowl.  Next you will want to make the dressing. Add all of the dressing  ingredients to bowl and mix together.
Next take the dressing and drizzle it over. Gently mix and finish with hempseed and enjoy!
